Sweet like sugar

My little guy is with his lovely grandparents for March break, getting spoiled rotten, and my husband is at work for the night. So what do I do with an evening all to myself? Go for a massage? Hit the town with friends? Wander the mall?

Nope. Watch 90210. Bake a cake. And hit this outfit by 6:30 pm. Look out world!

Sometimes it's nice to have a quiet night in, eat dinner in front of the TV, make a big mess in the kitchen while blaring Kelly Clarkson and watch something girly that my husband would not sit through. You feel me?

As for the cake part of the night, i've convinced myself that I'm not making or eating junk food since the recipe is called Cinnamon and Sugar Bread. Bread I would only eat after dinner, for dessert, and with a cup of tea. Cake what?

If you want your own cake (errr bread) party:

Heat oven to 350 degrees & lightly grease a cake pan

In a large mixing bowl:
2 cups of all-purpose flour (Gluten Free all-purpose for me!)
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1 cup white sugar

Stir together then add to the mix:
1 egg beaten
1 cup milk (Lactose free skim in my case)
1/3 cup vegetable oil

Pour half of the mixture in the cake pan

Mix together:
1/3 cup of sugar
2 teaspoons of cinnamon

Sprinkle over the layer in the cake pan

Add second half of mixture

Sprinkle more sugar & cinnamon top on if desired

Put in the oven for 40-50 minutes

Viola!
